Such is the perfect word to describe these dog days of summer. The morning starts out warm but with a touch of breathable coolness in the air.  As the day broadens, the heat swells. It rolls in like an invisible fog that slinks in around you with long puffy arms which envelop you from the ground up and settles in around you, until suddenly you realize- yep, it’s hot.

Growing up my summer days were spent tearing up the yard with games and adventures. Waving sprinklers were set up to run through, trees were climbed, bugs were collected in jars, and homemade popsicles were for after dinner as the day faded.

The difference here is the quiet of the day. As the sun blazes on the lawn mowers remain dormant, reposing is contained within cooled homes-shutters closed, while the summer song of the cicadas (locusts here) CHCHCHCHCHChhchchchch…. chatter in the trees in sound waves that rise to a rousing crescendo, then dissipate once again into the close quiet.

Southern summer quiet.

chilled asparagus soup~ A Stack of Dishes.comLight meals are preferred and sipping cool soup is a delight. Delicate asparagus is coddled in creamy Greek yogurt and made zesty with some tangy goat cheese.

Summer ease.

Ingredients
  1. 1 1/4 pounds of fresh asparagus, rough chopped
  2. 2 tablespoons olive oil
  3. 1 small yellow onion, diced
  4. 2 cloves garlic, minced
  5. 2 tablespoons flour
  6. 2 14oz cans of low sodium chicken broth, warmed
  7. 1 bay leaf
  8. 1/4 cup chopped parsley
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon freshly ground black pepper
  11. 1 cup plain nonfat Greek yogurt
  12. 2 ounces chèvre to serve
Instructions
  1. In a medium to large sized pot over medium heat, warm the oil then add the onions and garlic and gently cook to release the aromatics and soften the onions. Take care not to brown the onions.
  2. Add the asparagus and sauté for 3 minutes. At this point you may remove some of the tips and reserve as a garnish.
  3. Add the flour and cook for a good minute, stirring constantly.
  4. While stirring vigorously to avoid lumping, add half the broth and stir smooth. Then add the remaining broth and the bay leaf.
  5. Set on a low simmer for 15 minutes until the asparagus is tender and the bay is infused. Add salt and pepper.
  6. Remove from the heat and cool until warm to the touch, about 30 minutes- or chill overnight.
  7. Remove the bay leaf and add the parsley. Puree in a traditional blender or with a hand blender until smooth. Add the yogurt and blend again until thoroughly incorporated. Adjust seasonings if needed.
  8. Chill until cold, or you may serve at room temperature. Divide equally amongst four bowls and add the goat cheese and reserved asparagus tips.
  9. A little drizzle of earthy olive oil on top is a nice finish too.
Notes
  1. The soup may be made in advance and kept in the fridge for a day or two.

Not Fried Green Tomatoes

Not Fried Green Tomatoes ~ A Stack of DishesIt’s been almost 7 weeks since I pulled away from the grimy NYC curb, and pulled into the driveway of our balmy southern home. The first few weeks were an All-Hands-On-Deck flurry of disengaging my belongings from the wrappings and bondages of packing materials. There were days and days of navigating piles of cardboard and bubble wrap amidst stacks of books, china, linens and art- all searching for their final niche in the nest. They were hard, sweaty, un-fun days that I am sure Pam thought would never end. 

Somewhere towards the end, after staring at my collections of props and dishes for days on end (and I had given so much away!), she attempted a campaign of  Zen Minimalism. With admirable constraint she said, “I think we should have nothing, just the absolute minimum of what we neeeeed”.

To her credit she is slowly beginning to understand that multiple sets of white plates, serving spoons and napkins ARE what I need, and she can see that indeed they do get used fairly regularly. To her amazement and, (I assume) delight,  I have also managed to tuck everything away, and not in the teetering balanced matrix of NYC storage either. Everything has a place with easy access and room to breathe. Items are still seeking their level, and weekly there are more things added to the “donate” pile, but for the most part I have nestled my things in all tucked and cozy.

No Fried Green Tomatoes ~ A Stack of DishesThis has now brought us to the second phase of the move in- a long list of household projects, which has set the house into a different  type of disarray. Walls are being painted, furniture shifted and moved, curtain colors and fabrics to be decided upon, and together we are making a pair of upholstered headboards for the guest room. Day by day we practice our groove of co-mingling households, conceding to each other’s taste and style as we enhance our personal sense of home – OUR home. 

The truth is we are two women who have mostly lived alone for several years now, two STRONG women. Both of us have enjoyed the open freedom to purchase a pillow, or angle a rug without thought or consideration- but now we find ourselves in a wholly separate mindset of togetherness and creation. The interesting thing is we used to argue more about details when we were not together, but now- now it flows with grace and a resounding sense of satisfaction. That’s not to say we don’t disagree, we do, but once we’ve worked through the process, the final *sigh* is just so juicy and satisfying. It’s a world of yes, and beauty and building. We love it.

Short Rib Tacos with Cilantro Lime Cream

Short Rib Tacos~A Stack of Dishes.comWhat you are witnessing is the spoils of over grilling- Next day Short Rib Tacos served with crisp fresh garden vegetables. To sparkle things up I whipped up a refreshing and light cilantro lime cream, which for such low calories offered a flavor punch and delightful creaminess.

Earlier this week we had some friends over and we made up my Korean BBQ’d short ribs. Since we are cooking over charcoal I try to make the most out of the effort and often over grill. Cold smoky meats the next day on a salad is summertime heaven to me. It’s also quick and easy pickin’s, which means more time to run off and play, and less time over a sink or cutting board.

dem bones ~ A stack of dishes.comShort ribs can have some chew on them, but sliced thinly they were lovely in these tacos.

There is a fairly large Mexican community here and a surprising supply of produce and ingredients (read: cactus and many chilis). At my nearby supermarket they sell fresh hand made flour tortillas. Each one is rough and irregular and slightly dense. After some toasting over the flame of my stove, they are are soft and pliable and not at all floury like the mass produced versions.
